  • 1/2 cup warm water (filtered, around 45°C)
  • A pinch of salt
  • 1/2 tsp soy sauce (optional, for added flavour)
  • A few drops of sesame oil
  • Freshly chopped spring onions, for garnish (optional)

Instructions:

  1. Prepare the Egg Mixture: Crack the eggs into a bowl, add a pinch of salt, and beat gently until the whites and yolks are fully combined. Slowly add the warm water while stirring, creating a smooth, even mixture.
  2. Strain for Silkiness: Pour the egg mixture through a fine sieve into another bowl. This removes any lumps and air bubbles, giving your steamed eggs that perfect, silky texture.
  3. Set Up the Steamer: Prepare your steamer by bringing water to a boil. Place a heatproof dish with the strained egg mixture into the steamer.
