Ingredients

  • 4 Eggoz farm-fresh eggs
  • 2 tbsp butter or oil
  • 1 cup diced onions
  • 1 tbsp ginger and garlic paste
  • 2 chopped green chillies
  • 1 cup diced tomatoes
  • ½ tsp salt
  • ½ tsp red chilli powder
  • ½ tsp coriander powder
  • ¼ tsp haldi powder (turmeric)
  • 1 tbsp chopped coriander leaves
  • Whole spices (cinnamon, bay leaves, star anise)
  • 1 tbsp lime juice

Instructions

1️⃣ Hard-boil the eggs, remove the yolks, and grate the egg whites into a separate bowl. 

2️⃣ Heat butter or oil in a pan and add whole spices (cinnamon, bay leaves, star anise). 

3️⃣ Add diced onions and sauté until golden brown. 

4️⃣ Stir in ginger-garlic paste, followed by green chillies and diced tomatoes. 

5️⃣ Add salt, red chilli powder, coriander powder, and haldi powder, and cook until the oil separates. 

6️⃣ Pour in 2 cups of water (adjust as needed) and let the gravy cook. 

7️⃣ Add the grated boiled eggs, stirring well so they absorb the flavours. 

8️⃣ Finish with a squeeze of lime juice, garnish with fresh coriander, and serve hot.
