- 1 teaspoon cumin seeds
- 2 medium onions, finely chopped
- 2 medium tomatoes, pureed
- 1 teaspoon ginger-garlic paste
- 1/2 teaspoon turmeric powder
- 1 teaspoon ground coriander
- 1/2 teaspoon garam masala
- 1/2 teaspoon red chili powder
- 1/4 cup plain yogurt or cream
- 1 cup water
- Salt to taste
- Fresh cilantro for garnish
Steps
1. Make Koftas Dough
In a bowl, mix shredded boiled eggs, mashed potatoes, turmeric, red chilli, breadcrumbs, and salt. Mix well until a smooth, firm dough forms.
2. Cook Koftas
Form equal-sized, koftas from the mixture and cook until both sides are golden brown. Place them on a paper towel to drain grease.
3: Sauté Curry Base
In a large pan, heat oil or ghee. Sauté finely chopped onions in the pan for 7-8 minutes till golden brown and add ginger-garlic paste and simmer for 1-2 minutes to remove raw smell.
4. Make curry
Add the pureed tomatoes to the pan and simmer for 5-7 minutes, stirring regularly, until thickened and oil separates.
5. Add spices during curry preparation
Mix turmeric, ground coriander, red chilli powder, and garam masala. Toast and flavour spices by stirring thoroughly.
6. Add Yoghurt or cream
Reduce the heat and mix in the yoghurt or cream to make a creamy curry foundation. Simmer for 2-3 minutes to combine flavours.
7: Simmer Curry
Slowly cook the curry with 1 cup of water. Water can be added to adjust consistency.
8: Add Koftas
Add fried koftas to boiling curry carefully. For 3–4 minutes, let them soak up the gravy's rich flavours.
9: Serve and garnish
Remove the curry from heat and add chopped cilantro. Serve hot with naan, paratha, or basmati rice for a filling dinner.
