Ingredients

For the Flatbread:

  • 1 cup whole wheat flour (or all-purpose flour) 
  • 1/2 teaspoon salt
  • 1 tablespoon oil 
  • 1/2 cup water (as needed) 

For the Egg Mixture:

  • 4 large eggs 
  • 1 small onion, finely chopped 
  • 1 green chili, finely chopped 
  • 1/4 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder 
  • 1/2 teaspoon garam masala 
  • Salt to taste 
  • 2 tablespoons cilantro, chopped 

For Cooking and Garnishing:

  • 2 tablespoons oil or ghee 
  • 1 tablespoon butter (optional) 
  • Chopped cilantro for garnish 

Instructions

Step 1: Make dough

Mix flour, salt, and oil in a large basin. To get a soft dough, add water slowly. After 5-7 minutes of kneading, cover with a moist cloth and rest for 15-20 minutes.

Step 2: Mix Eggs

Crack and whisk the eggs in a bowl while the dough rests. Add chopped onion, green chilli, turmeric, red chilli powder, garam masala, salt, and cilantro. Mix well to season eggs equally.

Step 3: Roll Flatbread

Roll equal amounts of rested dough into 8-inch rounds. Flour gently to roll without sticking.

Step 4: Bake Flatbread

Heat a non-stick skillet or tawa on medium. Cook flatbread until bubbles form, 30-40 seconds. Cook the other side 30 seconds. Repeat with entire dough after removing from skillet.

5. Cook Egg Mixture.

Use same skillet to heat tablespoon of oil. As with an omelette, spread a thin layer of egg mixture in the pan.

6. Put Flatbread on Egg Mixture

While wet, place a baked flatbread on the egg mixture. Egg mixture clings to bread with little pressing. Heat 1-2 minutes.

7. Toss and cook

Carefully turn the flatbread to reveal the egg. Press gently and sauté for another minute until both sides are golden brown and egg is set.

Step 8. Roll Flatbread
