  • 2 tablespoons ghee/oil 
  • Salt to taste
  • Fresh cilantro garnish 

Instructions

  • Prepare Eggs: Lightly score the surface of the boiled eggs with a knife to help the curry flavors penetrate. Set them aside.
  • Sauté Base: Heat oil or ghee in a big pan on medium. Curry leaves should sputter for a moment. Add the chopped onion and sauté for 5-7 minutes until golden brown.
  • Ginger-Garlic Paste, Spices: Add the ginger-garlic paste and simmer for 1-2 minutes until aromatic. Add turmeric, red chilli, and ground coriander and stir thoroughly to coat onions.
  • Cook tomatoes: Add chopped tomatoes and a pinch of salt. Cook until tomatoes break down and create a thick paste, 5-7 minutes. Stir occasionally to avoid sticking.
  • Pour Coconut Milk: Gently whisk in the coconut milk on low heat. Let the curry cook for 5 minutes to blend flavours. If the curry is too thick, add water.
  • Add Eggs: Gently add the cooked eggs to the curry and simmer for 5 minutes to coat them with the rich, spicy sauce. Gently stir in garam masala.
