When it comes to bold flavours and aromatic spices, Chettinad cuisine stands out as a true gem from South India. Known for its fiery and flavorful dishes, the Egg Chettinad recipe is no exception. Combining hard-boiled eggs with a richly spiced gravy made from a blend of coconut, fennel, and a variety of traditional spices, this dish brings the essence of Tamil Nadu right to your plate. Whether you're looking for a hearty meal or something special for dinner, Egg Chettinad is a must-try!

Ingredients:

For the Egg Chettinad:

  • 6 Eggoz Fresh Eggs (hard-boiled)
  • 2 tbsp oil
  • 1 large onion, finely chopped
  • 2 tomatoes, finely chopped
  • 1 tbsp ginger-garlic paste
  • 1 tsp turmeric powder
  • 1 tsp red chilli powder
  • 1 tsp coriander powder
  • Salt to taste
  • Fresh coriander leaves for garnish

For the Chettinad Masala (Spice Mix):

  • 1 tbsp oil
  • 2 tbsp grated coconut
  • 1 tsp fennel seeds
  • 1 tsp cumin seeds
  • 2 tsp black peppercorns
  • 4-5 dried red chillies
  • 1 cinnamon stick
  • 4-5 cloves
  • 1 tsp poppy seeds
  • 1 tsp roasted gram dal (optional)

Instructions:

Step 1: Prepare the Eggs

  1. Boil the Eggoz Fresh Eggs for 10-12 minutes until they are hard-boiled. Once done, peel the eggs and set them aside.
    • Tip: Lightly score or make small slits on the boiled eggs to help them absorb the flavours of the gravy.

Step 2: Make the Chettinad Masala

  1. Heat 1 tablespoon of oil in a pan and dry roast the coconut until it turns golden brown.
  2. Add the fennel seeds, cumin seeds, black peppercorns, dried red chillies, cinnamon, cloves, poppy seeds, and roasted gram dal. Continue to roast for a few more minutes until fragrant.
  3. Allow the roasted spices to cool slightly, then grind them into a coarse powder. This is your Chettinad Masala.

Step 3: Prepare the Gravy

  1. Heat 2 tablespoons of oil in a large pan or skillet. Add the chopped onions and sauté until they turn golden brown.
  2. Add the ginger-garlic paste and sauté for another minute until the raw smell disappears.
  3. Stir in the chopped tomatoes and cook until they turn soft and the oil begins to separate.
  4. Add turmeric powder, red chilli powder, coriander powder, and salt. Mix well and cook for another 2-3 minutes.

Step 4: Add the Masala and Eggs

  1. Add the prepared Chettinad Masala to the gravy and mix well. Cook for a few minutes until the spices blend with the tomato-onion mixture.
  2. Gently add the boiled eggs and coat them in the rich, spicy gravy. Add a little water to adjust the consistency of the curry.
  3. Let the gravy simmer for 5-7 minutes, allowing the eggs to soak up the flavors of the spices.

Step 5: Garnish and Serve

  1. Once the curry thickens, turn off the heat and garnish with fresh coriander leaves.
  2. Serve hot with steamed rice, parathas, or dosa for a truly authentic South Indian meal.

Why Eggoz Fresh Eggs Make a Difference:

Using Eggoz Fresh Eggs in this recipe takes the dish to another level. These farm-fresh eggs have a richer, brighter yolk, which not only adds flavor but also makes the dish more nutritious. Their freshness ensures that the eggs hold their shape and texture well, even after being simmered in the spicy gravy.

Tips for the Perfect Egg Chettinad:

  1. Roast the Masala Properly: The key to a great Egg Chettinad is roasting the spices and coconut until they're aromatic and golden. This intensifies the flavours of the dish.
  2. Adjust the Spice Level: Chettinad cuisine is known for its spiciness. If you prefer a milder version, reduce the number of dried red chillies or black peppercorns in the masala.
  3. Make it in Advance: Like most curries, Egg Chettinad tastes even better the next day as the eggs absorb more of the gravy's flavours.

Conclusion

Egg Chettinad is the perfect dish for anyone who loves a rich, spicy, and comforting meal. The bold flavours of the Chettinad masala combined with the soft-boiled eggs create a dish that’s satisfying and bursting with taste. Give it a try at home with Eggoz Fresh Eggs and experience the authentic flavours of South India!
