Instructions
- Prepare the eggs: Crack the eggs into a bowl, and whisk them thoroughly with a pinch of salt, pepper, and paprika or chilli flakes if you prefer some heat.
- Cook the eggs: Heat a non-stick pan over medium heat and melt a tablespoon of butter. Pour the egg mixture into the pan and scramble them until they're fully cooked but still soft. Set the eggs aside.
- Toast the bread: In the same pan or a toaster, lightly toast your slices of bread until they are golden brown on both sides. You can also spread some butter on the bread before toasting for extra crispiness.
- Assemble the sandwich: Spread a thin layer of mayonnaise on one slice of bread and a layer of mustard on the other slice (optional).
