Ingredients:

For the Curry:

  • 4 Eggoz Fresh Eggs, hard-boiled
  • 2 large potatoes, peeled and cut into cubes
  • 2 medium onions, finely chopped
  • 1 large tomato, chopped
  • 1 tablespoon ginger-garlic paste
  • 1 teaspoon cumin seeds
  • 2-3 green chillies, slit
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chilli powder (adjust to taste)
  • 1/2 teaspoon garam masala
  • 1 bay leaf
  • 1-2 cups water
  • Salt to taste
  • 2 tablespoons mustard oil (or any cooking oil)
  • Fresh coriander leaves for garnish

Instructions:

Step 1: Boil the Eggs and Potatoes

  1. Start by boiling the Eggoz Fresh Eggs in water for about 10-12 minutes until fully cooked. Once boiled, remove the shells and make light slits on the eggs.
  2. Boil the potato cubes in water until they are cooked but still firm. Drain and set aside.

  1. Heat mustard oil in a pan until it starts to smoke lightly, then reduce the heat.
  2. Lightly fry the boiled eggs until they turn golden on all sides. Remove and set aside.

  4. Add the chopped tomatoes and green chilies, cooking until the tomatoes turn soft and mushy.
  5. Stir in the cumin powder, coriander powder, turmeric, red chili powder, and a pinch of salt. Cook the spices until they release their oil.

Step 4: Simmer the Curry

  1. Add the fried potatoes to the spice mixture and toss them until they are well coated with the masala.
  2. Pour in water to create a gravy-like consistency. Bring it to a simmer.
  3. Once the gravy starts to thicken, add the fried eggs and let everything cook together for another 5-7 minutes.
  4. Sprinkle garam masala over the curry and stir gently.
